Eggs in Purgatory with Basil and Toast
Eggs gently poached in a garlicky, slightly spicy tomato sauce. Bring the pan to the table with toast for dipping.
Ingredients
- Olive oil2 tbsp
- Garlic2 cloves
- Chilli flakes1/2 tsp
- Tinned tomatoes1 can
- Eggs4 pc
- Basil1/2 bunch
- Vegetarian hard cheese20 g
- Crusty bread4 slices
Method

Heat the oil in a frying pan that has a lid over medium heat and fry the sliced garlic and chilli flakes for 1 minute until fragrant.

Add the tomatoes, season and simmer for 10 minutes, stirring occasionally, until thick enough to hold a well.

Make four hollows in the sauce and crack an egg into each. Turn the heat to low, cover and cook for 7 minutes until the whites are set but the yolks are still runny.

While the eggs cook, toast the bread. Scatter the basil and grated cheese over the pan and serve straight away.
