Pea, Mint and Leek Soup

A bright green soup of sweet peas and soft leeks, blended smooth with fresh mint and a squeeze of lemon. Ready in half an hour.

Ingredients

  • Leeks2 pc
  • Olive oil2 tbsp
  • Floury potato1 pc
  • Garlic2 cloves
  • Vegetable stock1 L
  • Frozen peas500 g
  • Fresh mint1/2 bunch
  • Lemon1/2 pc

Method

    Slice and wash the leeks, then cook them in the oil in a large pan over medium heat for 8 minutes until soft but not coloured.

    Add the peeled, diced potato and sliced garlic, stir for 1 minute, then pour in the stock and simmer for 10 minutes until the potato is tender.

    Tip in the peas, bring back to a simmer and cook for 3 minutes so they stay bright green.

    Take the pan off the heat, add most of the mint leaves and blend until smooth, then season and add lemon juice to taste.

  5. 05

    Serve with the remaining mint torn over the top and a thin drizzle of olive oil.
