Baked Cod with Tomatoes, Olives and Lemon
Thick cod fillets baked on a soft onion and tomato sauce with olives and lemon slices. Simple, fresh and done in under an hour.
Ingredients
- Cod fillets4 pc
- Olive oil4 tbsp
- Onion1 pc
- Garlic2 cloves
- Dried oregano1 tsp
- Tinned tomatoes1 can
- Kalamata olives50 g
- Flat-leaf parsley1/2 bunch
- Lemon1 pc
Method

Heat the oven to 200C (180C fan). Heat 3 tbsp of the oil in an ovenproof frying pan over medium heat and cook the sliced onion for 8 minutes until soft, then add the garlic and oregano for 1 minute.

Add the tomatoes and simmer for 8 minutes until thickened. Stir in the olives and half the chopped parsley, and season.

Season the cod and nestle it into the sauce. Top with thin lemon slices, drizzle with the remaining oil and bake for 15 minutes until the fish is opaque and flakes easily.

Scatter over the rest of the parsley and serve straight from the pan.
