Palak Paneer with Toasted Cumin

Golden cubes of paneer folded through a vivid, silky spinach sauce with cumin, ginger and a splash of cream.

Ingredients

  • Spinach500 g
  • Paneer225 g
  • Green chilli1 pc
  • Ghee2 tbsp
  • Cumin seeds1 tsp
  • Onion1 pc
  • Garlic3 cloves
  • Fresh ginger20 g
  • Garam masala1 tsp
  • Double cream3 tbsp

Method

    Blanch the spinach in a large pan of boiling water for 1 minute, drain, rinse under cold water and squeeze dry, then blend to a smooth purée with the green chilli and a splash of water.

    Cut the paneer into cubes and fry in 1 tbsp ghee in a large frying pan over medium-high heat for 5 minutes until golden on several sides, then set aside.

    Add the remaining ghee and the cumin seeds, let them sizzle for 30 seconds, then add the chopped onion and cook for 8 minutes until golden before stirring in the grated garlic and ginger for 1 minute.

    Stir in the spinach purée and garam masala, season and simmer for 5 minutes, loosening with a little water if it gets too thick.

    Fold in the paneer and cream, heat through for 2 minutes and serve with rice or naan.
