Dorayaki Honey Pancakes with Sweet Red Bean
Soft, honey-scented pancakes sandwiched around a thick layer of sweet red bean paste. A teatime treat that keeps well wrapped overnight.
Ingredients
- Eggs2 pc
- Caster sugar60 g
- Honey1 tbsp
- Plain flour120 g
- Baking powder1 tsp
- Milk3 tbsp
- Sweet red bean paste250 g
- Vegetable oil1 tsp
Method

Whisk the eggs, sugar and honey for 2 minutes until pale and slightly thickened. Sift in the flour and baking powder, fold together, then stir in the milk until the batter is smooth and like thick cream.

Cover and rest the batter for 15 minutes.

Heat a non-stick pan over medium-low heat, wipe it with a little oil and then wipe off the excess. Pour in 2 tbsp batter to make a 9 cm round and cook for 2 minutes until bubbles appear on top, then flip and cook for 1 minute more.

Repeat to make 8 pancakes, about 12 minutes in batches, keeping the finished ones under a damp tea towel so they stay soft.

Spread red bean paste over the paler side of four pancakes, top with the rest, and press the edges together gently.
