Mushroom and Goat's Cheese Omelette with Chives
A soft, buttery French omelette folded around golden mushrooms and creamy goat's cheese. Quick enough for a weekday breakfast.
Ingredients
- Eggs5 pc
- Butter30 g
- Chestnut mushrooms150 g
- Soft goat's cheese60 g
- Chives1/2 bunch
Method
- 01
Melt half the butter in a 20cm non-stick frying pan over medium-high heat and fry the sliced mushrooms for 5 minutes until golden. Season and tip onto a plate.

Beat the eggs with a little seasoning and most of the snipped chives.

Melt half the remaining butter in the pan over medium heat, pour in half the egg and stir with a spatula for 1 minute, then leave for 1 minute so the base sets while the top stays slightly loose.

Spoon half the mushrooms and goat's cheese over one side, fold the omelette over and slide it onto a plate. Repeat with the rest of the butter, egg and filling, and finish with the remaining chives.
