Thin Apple Tart with Apricot Glaze

Crisp puff pastry topped with fanned apple slices, baked until the edges caramelise and brushed with shiny apricot jam.

Ingredients

  • Ready-rolled puff pastry1 pack
  • Eating apples3 pc
  • Butter25 g
  • Caster sugar2 tbsp
  • Ground cinnamon pinch
  • Apricot jam2 tbsp

Method

  1. 01

    Heat the oven to 200C (180C fan). Unroll the pastry onto a lined baking tray, score a 1cm border around the edge and prick the inside all over with a fork.

    Core the apples and slice them very thinly, leaving the skin on. Arrange in overlapping rows inside the border.

    Brush the apples with melted butter and sprinkle over the sugar and cinnamon.

  4. 04

    Bake for 30 minutes until the pastry is puffed and deep golden and the apple edges have caught a little.

    Warm the jam with a teaspoon of water, brush it over the apples and leave the tart to cool for 5 minutes before slicing.
