Baked Butter Beans with Tomato and Dill
Big, creamy butter beans baked in a rich tomato sauce with oregano and plenty of fresh dill. Lovely with bread and a green salad.
Ingredients
- Olive oil4 tbsp
- Onion1 pc
- Carrot1 pc
- Garlic3 cloves
- Tomato puree1 tbsp
- Tinned tomatoes1 can
- Dried oregano1 tsp
- Butter beans2 can
- Dill1/2 bunch
Method

Heat the oven to 190C (170C fan). Heat 3 tbsp of the oil in an ovenproof pan over medium heat and cook the diced onion and carrot for 8 minutes until soft, then stir in the garlic and tomato puree for 1 minute.

Add the tomatoes, oregano and 100 ml water and simmer for 5 minutes. Stir in the drained beans and most of the chopped dill, and season.

Drizzle over the remaining oil and bake uncovered for 25 minutes, until the sauce is thick and catching at the edges.

Scatter over the rest of the dill and serve warm.
