Baked Mac and Cheese with Crunchy Crumbs

Macaroni folded through a smooth, mustardy two-cheese sauce and baked under a golden panko crust.

Ingredients

  • Macaroni400 g
  • Butter60 g
  • Plain flour50 g
  • Milk800 ml
  • Mature Cheddar250 g
  • Red Leicester100 g
  • English mustard1 tsp
  • Panko breadcrumbs50 g
  • Smoked paprika pinch

Method

    Heat the oven to 200C and cook the macaroni in boiling salted water for 2 minutes less than the packet says, about 7 minutes, then drain.

    Meanwhile, melt 50 g butter in a large pan, stir in the flour for 1 minute, then gradually whisk in the milk and simmer, stirring, for 5 minutes until it coats the back of a spoon.

    Take the sauce off the heat, stir in the mustard, the Red Leicester and all but a handful of the grated Cheddar until melted, season, then fold in the pasta and tip it into a baking dish.

    Melt the remaining butter, toss it with the panko, paprika and the last of the Cheddar and scatter over the top.

    Bake for 20 minutes until golden and bubbling, then rest for 5 minutes before serving.
