Teriyaki Salmon with Sesame Broccoli

Crisp-skinned salmon glazed in a quick homemade teriyaki, with tenderstem broccoli tossed in sesame and a bowl of rice.

Ingredients

  • Salmon fillets2 pc
  • Soy sauce3 tbsp
  • Mirin3 tbsp
  • Sake2 tbsp
  • Sugar1 tsp
  • Tenderstem broccoli200 g
  • Toasted sesame seeds1 tbsp
  • Sesame oil1 tsp
  • Vegetable oil1 tsp
  • Short grain rice1 cup

Method

    Rinse the rice, add 1 1/4 cups water and bring to the boil, then cover and simmer on low for 15 minutes and rest off the heat for 10 minutes.

    Mix the soy sauce, mirin, sake and sugar in a jug.

    Heat the oil in a frying pan over medium-high heat and cook the salmon skin side down for 4 minutes until crisp, then flip and cook for 2 minutes.

    Lower the heat to medium, pour in the sauce and let it bubble for 2-3 minutes, spooning it over the fish, until syrupy and the salmon is cooked through to 63C in the centre.

    Meanwhile boil the broccoli for 3 minutes, drain and toss with the sesame oil and seeds. Serve everything with the rice and any extra glaze.
