Fattoush with Crispy Halloumi
A crunchy chopped salad of lettuce, cucumber, radish and baked pitta in a tangy sumac dressing, topped with golden slices of halloumi.
Ingredients
- Halloumi250 g
- Pitta breads2 pc
- Little gem lettuces2 pc
- Cucumber1 pc
- Cherry tomatoes250 g
- Radishes150 g
- Mint1 bunch
- Sumac2 tsp
- Olive oil5 tbsp
- Lemon1 pc
Method

Heat the oven to 200C, tear the pittas into bite-sized pieces, toss with 2 tbsp of the oil and 1 tsp sumac and bake for 8 minutes until crisp.

Chop the lettuce and cucumber, halve the tomatoes, thinly slice the radishes and pick the mint leaves into a large bowl.

Whisk the remaining 3 tbsp oil with the lemon juice and the rest of the sumac, then season to make the dressing.

Cut the halloumi into 8 slices and dry-fry in a non-stick pan over medium-high heat for 2 minutes each side until deep golden.

Toss the salad with the dressing and pitta crisps just before serving, then lay the hot halloumi on top.
