Slow Roast Pork Shoulder with Fennel

A weekend roast that needs five minutes of work and four hours of patience.

Ingredients

  • Pork shoulder2 kg
  • Fennel seeds2 tbsp
  • Garlic1 bulb
  • White wine250 ml
  • Bay leaves3 pc

Method

  1. 01

    Score the skin, rub with salt and crushed fennel seeds, and leave uncovered in the fridge overnight if you can.

  2. 02

    Roast at 240C for 30 minutes to start the crackling.

  3. 03

    Drop to 150C, add the wine, garlic and bay to the tin, and cook for 3.5 hours.

  4. 04

    Rest for 30 minutes before pulling the meat apart.
