Smash Burgers with Pickles and Burger Sauce

Thin beef patties pressed hard into a smoking pan for lacy, crisp edges, stacked double with melting cheese and tangy sauce.

Ingredients

  • Beef mince (20% fat)600 g
  • Burger buns4 pc
  • Burger cheese8 slices
  • Onion1 pc
  • Dill pickles2 pc
  • Mayonnaise4 tbsp
  • Ketchup2 tbsp
  • American mustard1 tbsp
  • Butter20 g

Method

    Mix the mayonnaise, ketchup, mustard and 1 tbsp finely chopped pickle into a sauce, then slice the rest of the pickles and the onion very thinly.

    Divide the beef into 8 loose balls without packing them tightly. Butter the cut sides of the buns and toast them in a large heavy frying pan over medium heat for 2 minutes, then set aside.

    Turn the heat to high until the pan is smoking, add 2-4 balls and press each one flat with a sturdy spatula to about 5 mm thick, then season the tops.

    Cook for 2-3 minutes until deeply browned at the edges, flip, lay a slice of cheese on each and cook for 1 minute more until cooked through with no pink, then repeat with the rest.

    Stack two patties in each bun with sauce, onion and pickles and eat straight away.
