Crispy Gnocchi with Brown Butter, Sage and Peas

Shop-bought gnocchi fried until golden, then tossed with nutty butter, crisp sage leaves and sweet peas. Dinner in twenty minutes.

  • Fresh gnocchi500 g
  • Olive oil1 tbsp
  • Butter40 g
  • Sage4 sprigs
  • Frozen peas150 g
  • Lemon1/2 pc
  • Vegetarian hard cheese30 g

Method

    Heat the oil in a large non-stick frying pan over medium-high heat. Add the gnocchi in a single layer and fry for 7 minutes, turning now and then, until golden and crisp on most sides.

    Push the gnocchi to one side, add the butter and the sage leaves and cook for 2 minutes until the butter smells nutty and turns light brown and the leaves crisp up.

    Tip in the frozen peas and toss everything together for 3 minutes until the peas are hot.

    Squeeze over the lemon, season well and finish with plenty of grated cheese.
