Paprika Pork Skewers with Red Onion

Tender pork cubes marinated in smoked paprika, cumin and lemon, then charred on a hot griddle. Great with a crisp salad.

Ingredients

  • Pork tenderloin600 g
  • Olive oil3 tbsp
  • Garlic2 cloves
  • Smoked paprika2 tsp
  • Ground cumin1 tsp
  • Dried oregano1 tsp
  • Lemon1 pc
  • Red onion1 pc

Method

    Cut the pork into 3cm cubes. Mix the oil, crushed garlic, paprika, cumin, oregano and the zest and juice of half the lemon, season, and toss with the pork. Marinate for 15 minutes, or overnight in the fridge.

    If using wooden skewers, soak them in water while the pork marinates. Thread the pork onto the skewers, alternating with chunks of red onion.

    Heat a griddle pan or grill to high and cook the skewers for 10 minutes, turning every couple of minutes, until charred outside and cooked through with no pink juices (70C in the centre).

    Rest for 3 minutes, then squeeze over the remaining lemon and serve.
